Pimento Chicken Pasta

Ingredients

  • 3 cups of chicken broth

  • 8 ounces of cream cheese

  • 16 ounces of pasta

  • 1 jar (4 ounces) of pimentos

  • 3 tablespoons of ranch powder

  • 2 cups of colby jack cheese, shredded

  • 1/2 pound of chicken breast, cut into bite-sized pieces

Directions

  • Optional, if using raw chicken:
    Heat up the Instant Pot using the saute function. Add a tablespoon of olive oil and diced raw chicken to the pot.

  • Cook the chicken for about 5 minutes or until it turns white and there is no pink remaining.
    Note: If using precooked chicken, skip this step and add the chicken to the Instant Pot in step 3.
  • In the Instant Pot, combine the chicken broth and cream cheese.
  • Add in the pasta, pimentos, ranch powder, and shredded cheese. Mix well to combine all the ingredients.
  • Add in the chicken pieces and stir to ensure that they are well-coated with the sauce.
  • Cook on high pressure for 5 minutes.
  • Open the Instant Pot lid and give the pasta a good stir.
  • Serve hot and enjoy!
  • Note: You can use any type of pasta and cheese that you prefer. Additionally, you can adjust the amount of ranch powder based on your personal taste preferences.
